Ingredients :

  • Gram flour(Besan)- 2 cups
  • Oil – 1/4 cup
  • Carom seeds- 1/2 tsp
  • Turmeric powder- 1/2 tsp
  • Red chilly powder- 2 tbsp
  • Salt- 1/2 tsp
  • Baking soda – 1/4 tsp
  • Water – for making dough

Method:

  2. In a Bowl , take gram flour, turmeric powder, red chilly powder,  carom seeds, Baking soda.Teekha sev step 02.jpg
  3. Add Oil and mix everything well.

     

  4. Now make a soft dough by adding water as requiredTeekha sev step 05.jpg

  6. You need a sev machine to make sev. Grese the inner side of machine with oil.sev machine 1.jpeg
  7. Apply oil on your palms and take out a big ball from dough. Roll it long so that it fits into machine.Teekha sev step 07.jpg
  8. Now insert the ball in machine and close its lid. sev machine 2
  9. Heat oil in a kadhai. Oil should be heated till medium. (add a little sev. If its floating up, then then the oil is ready).Teekha sev step 08.jpg

Shakar Paare (shankarpali)

Shakar paare step by step recipe. Diwali is already near and there are so many snacks to do, one of them is shakar paare. Wishing you a very Happy Diwali. May this festive brings success and prosperity to you and your family.shakar paare pic 01.jpg

Making shakar paare is quite simple compared to other diwali snacks,  its sweet and crispy and little flaky. Its important that dough of shakar paare should be kept at rest for 30 mins and later it is deep fried in ghee on a low-medium flame. Lets start making shakar paare.shakar paare 2

Ingredients:

  1. All purpose flour-  4 cups
  2. Semolina -1/2 cup
  3. Ghee- 1 cup
  4. Milk- 1 cup
  5. Sugar- 1 cup
  6. Salt – 1 tsp
  7. Ghee or oil- for deep frying

Method:

  2. In a saucepan, add Milk. Heat the milk till it gets warm. Don’t boil it.shakar paare step 02.jpg
  3. Switch off the flame. Add ghee.  shakar paare step 03

  7. In a big bowl, add all purpose flour, semolina and salt.shakar paare step 08.jpg
  8. Now add the milk-sugar mixture. Mix everything well and make a soft yet firm dough.(If you think your dough is loose or watery, add more all purpose flour. You can add milk if its too stiff.   9. Keep a cloth on dough and let it rest for 30 mins.shakar paare step 10.jpg
  10. Make medium sized balls of dough. Take a ball and press it both your palms. shakar paare step 11.jpg
  11. Roll it into a a thick, flat and round like a paratha. The corners may not be even, but it happen while making parras. shakar paare step 12
  12. With the help of knife or cutter, cut it into small squares as shown.shakar paare step 13
  13. Heat ghee in a frying pan or kadhai. The ghee should not be too hot nor little bit hot. It should be medium hot. Slowly add the parras. shakar paare step 14.jpg

  15. Fry them till they are golden brown. See to it gets well cooked or fry for little more time.shakar paare step 16

Dudhi nu Muthia (Lauki nu muthia)

Ingredients:

  • Bottle gourd- grated, 1 1/2 cup
  • Wheat flour- 1/2 cup
  • Semolina(suji)- 1/2 cup
  • Gram flour- 1/2 cup
  • Green chilies- 2 to 3, chopped
  • Coriander leaves- 2 to 3 tbsp
  • Cumin seeds- 2 tsp
  • Mustard seeds- 2 tsp
  • Sesame seeds – 2 tsp
  • Baking soda- 1 pinch
  • Asafetida- 1 pinch
  • Ginger- garlic- green chilly paste(4 to 5 garlic cloves, 1/2 inch ginger and 2 green chilies ground to paste)
  • Curry leaves- 5 to 6
  • Sugar- 1/2 tsp(optional)
  • Turmeric powder- 1/2 tsp
  • Salt- as per your taste
  • Oil- 3 tbsp

Method:

  2. In a bowl, grate Bottle gourd. Add 3/4 tspsalt and keep beside for 2 to 3 mins. Remove and keep aside excess water of Bottle gourd.
  3. In another bowl , take wheat flour, gram flour, semolina, chopped coriander, bottle gourd,turmeric powder,  ginger-garlic-chilly paste.Dudhi nu Muthia step 04.jpeg
  4. Mix them well. Make a soft  dough by adding the water removed from bottle gourd.Dudhi nu Muthia step 05.jpeg
  5.  Now start making cylindrical rolls of dough by hands. Apply a little oil on your palms while making rolls.Dudhi nu Muthia step 06.jpeg
  6. In a streamer, add 1 1/2 cups of water and boil. Grease a plate by oil and keep the plate for steaming.Dudhi nu Muthia step 07.jpeg

  8. For tampering, Heat 3 tbsp of oil. Add chopped green chilies, curry leaves, Cumin and mustard seeds . Saute till green chilies are well friedDudhi nu Muthia step 10.jpeg

  10. Add muthias and Mix them well.

Noodles spring roll is a recipe of crispy rolls stuffed with noodles. Note: Here I have used spring roll sheets available in market. Lets start making noodles spring roll:

Ingredients: (for 18 spring rolls )

  • Spring roll sheets- 18
  • Boiled Noodles – 1 pack
  • Onion- 1, sliced
  • Capsicum- 1, sliced
  • Cabbage- 1/2 cup, grated
  • French beans- 1/2 cup
  • Ginger garlic chopped- 2 tbsp
  • Green chilly- 2 to 3, finely chopped
  • Soy sauce- 1 tbsp
  • Red Chilly sauce- 1 tbsp
  • Vinegar- 1/2 tbsp
  • Black pepper- crushed
  • All purpose flour- 2 tbsp
  • Oil – 2 tbsp(for noodles)
  • salt- as required
  • Oil- for deep frying spring rolls

Method:

  3. Add Chopped ginger garlic and green chilies. Saute for 1 min.noodles spring roll step 03.jpg

  5. Add cabbage, capsicum and french beans. Keep lid and Cook them on a medium flame for 5 mins.noodles spring roll step 05.jpg

  7. Add the Noodles and add soy sauce, red chilly sauce,vinegar and salt. Mix them nicely.

     

  8. Your Noodles stuffing is ready. Let it cool down completely.noodles spring roll step 10.jpg
  9. Take all purpose flour in a small bowl and make a thick paste of it using water. Add water as per your requirement.noodles spring roll step 11
  10. Remove the pack of spring roll sheets from refrigerator. Let it come to room temperature. Carefully remove one sheet. Keep wet kitchen towel on remaining sheets .noodles spring roll step 12.jpg

Cheese Paratha

Cheese paratha is very delicious and easy to prepare recipe made by using cheese and vegetables . You can add different veggies and this recipe is loved by kids. There is no measurement of adding veggies and cheese . If you like more veggies then add less cheese. If you like cheese, add more cheese and less veggies.Cheese paratha 2

Cheese paratha should be eaten when hot and it turns dense once cold. So lets start making easy and cheesy paratha.Cheese paratha 1

 

Ingredients:

For dough

  • Wheat flour- 2 cups
  • Coriander leaves- 2 tbsp, finely chopped
  • Water- 1 cup or as required
  • Salt – 1 tsp

For stuffing

  •  Cabbage- 1/2 cup, finely chopped
  • Carrot- 1/4 cup, grated
  • Capsicum- 1/4 cup, finely chopped
  • Yellow bell pepper- 1/4 cup,finely chopped
  • French beans- 1/4 cup, finely chopped
  • Chilly flakes- 1 tsp(You can add more for more spicier version)
  • Black pepper powder- 1/2 tsp
  • Oregano- 1 to 2 tsp
  • Salt- 1/4 tsp(Less salt as cheese already contains salt)
  • Oil- 1 tsp
  • Wheat flour – for dusting
  • Ghee- for roasting parathas

Method:

  2. In a bowl add flour, salt, coriander leaves and oil and mix. Now make dough by adding water little by little.Make soft paratha dough . When done, cover and keep aside for 20 mins.
  3. Lets prepare stuffingCheese paratha step 04.jpeg
  4.  In a pan , heat oil and add chopped onion. Fry till golden brown.Cheese paratha step 05.jpeg
  5. Add the remaining veggies and cook them on medium flame for 5 to 10 min
  6. Add chilly flakes and oregano, salt and mix

     

  7. When done, remove from off the flame. Let it cool down completely. In a bowl,  add cheese and Mix the cooked veggies with cheese

     

  8. Make small to medium balls of dough. Take a ball and dust some flour on it .Flatten the ball with help of roll pin. Add 2 to 3 tbsp of stuffing.

     

  9. Press all the edges and try to close it. Dust some flour again.
  10. Now roll and flatten the paratha to a size of roti .Heat a pan add 1 tsp of ghee.Place paratha on pan and cook the paratha on a medium flame.
  11. When partly cooked , flip the paratha and add 1 tsp ghee. Cook paratha till crisp and soft.Cheese paratha step 21.jpeg

Aloo Samosa

My son was insisting me to make samosas so today I’ll be preparing Aloo samosa. It tastes best than those available at market. Its everyone’s favorite tea time snack and once you make it at home you’ll never turn to those market samosas.Aloo samosa PROFILE

Samosa stuffing can be varied. I have made stuffing by using only potatoes. So lets make Aloo samosa Aloo samosa step 2.jpeg

Ingredients:

For dough :

  1. All purpose flour – 2 1/4 cup
  2. Oil – 2 to 3 tbsp
  3. Carom seeds (ajwain)- 1 tsp
  4. Salt – 3/4 tsp
  5. Water –  as required

For stuffing

  1. Potatoes- 6 to 8, boiled and mashed
  2. Green chilies- 3 to 4
  3. Garlic cloves- 6 to 7
  4. Ginger – 1/2 inch
  5. Cumin seeds- 1/2 tsp
  6. Fennel seeds- 1/2 tsp, crushed
  7. Coriander powder- 1/2 tsp
  8. Garam masala powder- 1/2 tsp
  9. Salt- as required
  10. Oil – For deep frying samosas

Method:

  2. We are going to make Green chilly- garlic paste. For that take green chilies, garlic,ginger,cumin seeds.Aloo samosa step 02.jpeg
  3. In a mixer/grinder, grind it to coarse mixture.Aloo samosa step 03
  4. In a bowl, take all purpose flour, salt, carom seeds and oil. mix well. Start kniding by adding water little by little.Aloo samosa step 04.jpeg

  7. Add the coarse mix of green chilies and garlic paste. Fry for 2 to 3 mins.Aloo samosa step 07.jpeg

  13. Now take one ball and roll it like a roti but neither too thick nor thinAloo samosa step 13.jpeg

  15. Apply some water on half of the straight edge. Try to join them and make a cone.Aloo samosa step 15.jpeg
  16. Stuff the cone with potato stuffingAloo samosa step 16
  17. Apply some water on the corner of the edge and press them tight. This will help your samosa to standAloo samosa step 17.jpeg

  19. Heat oil in a kadhai or frying pan. The oil should be heated well.Aloo samosa step 18.jpeg
  20. On a low to medium flame, start dipping the samosas slowly.Aloo samosa step 20.jpeg

Your Aloo Samosas are ready. Serve with Mint chutney or Tamarind chutney. Aloo samosa.jpeg Note:

  1. I have made big samosas. If you want to want small samosas, just make small size balls.
  2. To make Samosas requires a little patience. By little practice you will make perfect samosas.
  3. While frying samosas keep in mind to fry samosas on low flame, otherwise they would not cook from inside

Arbi fry/ Besan wali arbi

 

Cover pic 01Hello!!!! Today I’m posting a recipe of yummy root loved by everyone….. its tarot root. Tarot root tastes similar like potatoes and can be made as side dish or main dish. In India it called Arbi/Arvi. Today I’m preparing recipe of Fried arbi or besan wali arbi that can be served as appetizers or main dish. Lets start making fried arbi..Besan arbi pic01.jpg

INGREDIENTS:

  • Arbi/Tarot root- 250 gms
  • chickpea flour/besan- 4 tbsp or 1 small bowl
  • Turmeric powder- 1/2 tsp
  • Red chilly powder- 1/2 tsp
  • Coriander powder-1/2 tsp
  • Amchur powder-1/2  tsp
  • Garam powder-1/2 tsp
  • Carom seeds- 1/4 tsp
  • Green chilies- 3 to 4, finely chopped
  • Fresh coriander- finely chopped
  • Asafoetida- one pinch
  • ginger garlic paste- 1/2 tsp
  • Salt- as per your taste
  • Oil- for frying arbi

METHOD:

  1. Check ingredients for making besan wali arbi. Besan arbi recipe step01
  2. Wash Arbi with enough water. In a pressure cooker add 1 cup of water and arbi. pressure cook arbi till three whistles. Don’t overcook arbi otherwise it will turn soggy.

     

     

  3. Till arbi cooks, we will prepare the mixture of besan/chickpea flour. In bowl, take chickpea flour and add red chilly powder,turmeric powder, amchur(raw mango powder),coriander powder, garam masala powder and salt.Add water little by little to make a thick mixture. Mix it well and keep aside.
  4. Remove arbi and let it cool down completly. Peel the skin of arbi. Cut it into two halves, take one half on your palm and press them with your both hands.

     

     

  5. Heat 4 to 5 tbsp oil in a pan. Dip arbi one by one in chickpea flour/besan mixture and fry arbi

     

  6. Turn arbi and fry them till they are crisp. When done, remove arbi and keep them in paper towel. Besan arbi recipe step12
  7. In the same pan, heat 1 tbsp of oil and add green chilies, carom seeds, asafoetida, ginger garlic paste and mix

     

  8. Add Arbi and mix well. Finally add coriander leaves and turn the flame off.Besan arbi recipe step15

    Your Besan wali arbi or Fried arbi is ready to serve. You can have it as starter or you can have it with roti or daal-rice. Besan arbi pic02.jpg
