Delicious besan ke laddu Recipe stepwise…. Besan ke laddu is my favorite and I make it every Diwali. My kids too love this laddu. It’s a traditional Recipe and very easy to make. So let’s prepare besan ke laddu.Besan laddu 1.jpg

Ingredients:

  1. Gram flour(besan)- 2 cup
  2. Tagar(or powdered sugar)- 1.5 cup
  3. Clarified butter(ghee)- 1 1/4 cup
  4. Badam- chopped, 5 to 6
  5. Cardamom powder- optional

Method :

  • In a non-stick pan, add besan and roast on a low flame. Keep mixing so that besan does not burn.Besan laddu step 02
  • Roast for 5-7 mins. Roasting without ghee saves time and gives it a nice taste.Besan laddu step 02
  • Now add ghee and mix it well. Keep the flame low.Besan laddu step 04.jpg
  • Mix well.You will see the besan and ghee gets binded well. Now sprinkle 1 tbsp of water and mix it very well. Bubbles will be formed in besan. (Adding water gives a good texture to your laddu)Besan laddu step 05.jpg
  • Roast the besan till there are no bubbles in besan. Your roasted besan is ready.Besan laddu step 06.jpg
  • Remove roasted besan in a big plate or Bowl. Allow it to cool down completely.Besan laddu step 07.jpg
  • When cooled, add tagar. You can add cardamom powder and chopped dry fruits. It’s optional.Besan laddu step 08.jpg

  • Take a small amount of laddu mix in you hand. Bind it together with your palms.Besan laddu step 10.jpg
  • Give it a round shape. Your laddu is ready. Similarly make laddus of all laddu mix.Besan laddu step 11.jpg

Fried Modak

Modak is the delicacy which is made during Ganesh Chaturthi or during fast on Sankashti Chturthi. Fried modak is also made in variety of ways like using dry coconut, using sugar or jaggery. Some of people use maida (all purposr flour) or wheat flour.Fry modak 01.jpg

Fried modak tastes delicious and unique than other sweets. When you make fried modak using jaggery, it can be stored for 4 to 5 days. When its made up of sugar, it can be stored for 20- 25 days. So lets start preparing Fried modak:

Ingredients:

  • Wheat flour- 1 cup
  • Semolina- 2 tbsp
  • Grated coconut- 1 up
  • Jaggary-  1/2 cup, chopped
  • Poppy seeds (khuskhus)- 1 tsp(optional)
  • Chopped almonds- 1 tbsp
  • Cardamom powder- 1 tsp(optional)
  • Clarified butter- 2 tbsp (for dough)
  • Water – as required
  • Clarified butter- (ghee) for deep frying modaks

Method:

  2. In a pan, heat 1 tbsp of ghee. Add poppy seeds and fry till goldenFry modak recipe 02.jpg
  3. Add grated coconut. Saute on a medium flame for 5 mins till it become dry.Fry modak recipe 03
  4. Add jaggery, saute for 10 mins till it becomes dry.Fry modak recipe 04

  7. In a bowl, take wheat flour, semolina and add 2 tbsp of ghee. Mix well.Fry modak recipe 05
  8. Knead the flour by adding water little by little. Make firm dough for modaks. Keep lid and set aside for 20 minsFry modak recipe 06.jpg

Churma Laddu

Churma Laddu is a traditional Rajasthani sweet. Its specially made on occasions of Ganesh chaturthi. Its a simple sweet recipe and can be made on any festivals including Diwali.

Churma laddu  is made using whole wheat flour. Its can be made by roasting the batti  or the frying the batti. You can make laddu of jaggery or powdered sugar. Here Im showing recipe using powdered sugar.Churma Ladoo 2

 

Ingredients:

  • Whole wheat flour(atta)- 1 cup
  • Semolina- 1/4 cup
  • Powdered sugar- 1 1/2 cup(You can reduce or increase quantity of sugar as desired)
  • Clarified butter- 1/2 cup
  • Milk- for kniding dough
  • Chopped almond/cashews/pistachios- 2 tbsp
  • Clarified butter (ghee)- for frying

Method:

  2. In a bowl, take wheat flour, semolina, and 1/4 cup ghee.
  3. Make a stiff dough by adding milk (I have used 1/3 cup of milk)Churma Ladoo step 04

  5. Heat some Ghee in a frying pan.On a low flame, fry the baati till they are brown and crisp (do not fry for less time, as they require more time to cook )

Ukdiche Modak(steamed modak)

Happy Ganesh chaturthi!!! Today I’m sharing the recipe of Ukdiche modak. In India, ganesh chaturthi is a ten day festival where Idols of Lord Ganesha is kept at home and people devote and pray to god with great love…. Lord Ganesha’s favorite sweet was modak. So during Ganesh chaturthi it is kept before Ganesha and is given to everyone after prayers called “prasad”Ukdiche modak pic 01

 

Ukdiche modak or steamed modak is a sweet dumpling made with coconut and jaggery. It requires a little practise but the end result is nothing but tastiest Modak 🙂Ukdiche modak pic 02

Lets start making Ukdiche Modak:

Ingredients:

  • Grated fresh coconut- 2 cups
  • Jaggery- 1 cup
  • Rice flour- 2 cups
  • Clarified butter(ghee) – 2 tsp
  • Water – 1 cup or as required
  • Salt- 1/4 th tsp
  • Green Cardamom- crushed, 4 to 5

Method :

  2. In a saucepan, add 1 cup of water and let it come to boilUkdiche modak step 02.jpg
  3. Add rice flour and mix the flour with water. (see to it that no lumps are formed)Ukdiche modak step 03.jpg
  4. Switch off the flame. Remove the pan frm stove and keep lid on it for 5 to 10 mins. Ukdiche modak step 04.jpg
  5. Remove the dough in a bowl/plate and apply some water on your hands. Make a soft dough by kneading the dough. Add some water if your dough is dry. Keep a wet cloth on the dough so it doesn’t become hard.Ukdiche modak step 05.jpg
  6. Heat ghee in another pan. Ukdiche modak step 06
  7. Add the grated coconut and mix. Ukdiche modak step 07
  8. On a medium flame, Mix coconut till it becomes dry for 5 to 7 minsUkdiche modak step 08.jpg
  9. Add jaggery, mix well till it dissolves in coconut.Ukdiche modak step 09.jpg
  10. Add the crushed cardamom.Ukdiche modak step 10
  11. Mix and cook the coconut-jaggery mixture till it becomes dry. Let it cool down completely.Ukdiche modak step 11.jpg
  12. Apply some water on  palms and make small balls of same size of rice dough. Take one ball, with the help of your thumbs make a small a shallow bowl shape or a disc. Ukdiche modak step 12.jpg
  13. Make plates by pressing edges one by one.Ukdiche modak step 13.jpg

  15. Now gather all the plates together and join them. Ukdiche modak step 15.jpg
  16. Remove any extra dough if there (it tastes less sweet and more dough if extra dough is kept). Tamper the modak from top and shape them.Ukdiche modak step 16.jpg
  17. In similar way make modaks of all dough and filling.Ukdiche modak step 17.jpg
  18. Now in steamer, add 1 cup of water. Let the water boil. Grease the banana leaf or plate with clarified butter. Keep banana leaf in the plate on which you are going to place your modak for steaming.(I’m steaming in a Poha strainer)Ukdiche modak step 18.jpg
  19. Keep Modak in them and steam for 25 – 30 mins on a low flame till the cover of the modak is not sticky.

Coconut Burfi

Coconut burfi is one the simplest sweet which is loved by everyone. The authentic taste of coconut burfi cannot be replaced by any sweet…….I love it so much and I’m sure you will love it too. Coconut burfi can be made with desiccated coconut or fresh coconut , I made using fresh coconut. Coconut burfi can be made on any festive but its made specially during diwali…lets start making Coconut burfi._20170617_211442.jpg

Ingredients:

  • Fresh coconut- 1 whole, grated (skip the brown part)
  • Sugar- 3/4 cup
  • Milk- 1/2 cup
  • Ghee(clarified butter)- 2 tbsp
  • Crushed green cardamom – 1/4 tsp
  • Almonds/pistachios/cashews- sliced

Method:

  1. Check ingredients for making coconut burficoconut burfi step 01
  2. In a non-stick pan,add ghee. Add the grated coconut and saute on a high flame for few seconds

     

  3. Then add sugar, milk and let it come to a boil. On a medium flame, keep stiring continuouslycoconut burfi step 04
  4. Then add the cardamom powder when its half dried. Stir continuously so that it does not stick to the bottom pan.coconut burfi step 05.jpg
  5. Mix continuously till the mixture gets completely dried. coconut burfi step 06.jpg
  6. Grease ghee on a plate and add the mixture on platecoconut burfi step 07.jpg
  7. Then with the help of knife, shape the mixture like square. coconut burfi step 08.jpg
  8. Garnish with sliced nuts (I sprinkled some sliced almonds). Let it cool completely. cut into square/diamond peices.

Mango Lassi (Mango yogurt smoothie)

In mango season, we make different recipes using mangoes. People wait for mango season that comes in April- May in India. Mango lassi is a flavorful mongo-yogurt smoothie is a delightful and refreshment that looks you down in summers . You can use different variety of mangoes for this. I have used Alphanso Mangoes. Mango Lassi requires less sugar as mangoes already contains a lot of sugar. You can even skip sugar if Your diet concious.

Lets make Chilled Mango Lassi Mango lassi cover pic 02.jpeg  Ingredients:

  • Mangoes- 2
  • Curd or yogurt- 250 gms, chilled
  • Milk- 1/2 cup, chilled
  • Sugar- 4 tbsp
  • Cardamom powder- 1/4 tsp
  • Chopped cashew nuts  – 1/2 tsp
  • chopped pistachios – 1/2 tsp

Method:

  1. Check ingredients for making Mango Lassi.Mango lassi step 01
  2. Peel Mangoes and remove pulp from it. In a blender or mixer, add mango pulp. Add sugar and blend it to smooth paste
  3. Add curd/yogurt. milk and again blend it. You can add some ice cubes if desired.

     

  4. Remove lassi in serving glass. Sprinkle some cardamom powder. Add chopped pistachios and cashew nuts.

     

    Your Mango lassi is ready !!!!!

Rich taste of Ferrero rocher is loved by everyone. Ferrero Rocher shake have an unique and awesome taste loaded with chocolate…. So lets make Ferrero Rocher shake

Ingredients:  (serves 2)

  • Ferrero Rocher chocolate- 4 to 5
  • Chilled Milk- 1 cup
  • Nuetella spread- 2 to 3 tbsp
  • Sugar- 2 tbsp
  • Chocolate Ice cream- 3 scoops(for shake)
  • Chocolate Ice cream- 2 scoops- (for garnishing)
  • Chocolate sauce- for garnishing.

 

Method:

  2. Remove Ferrero rocher from pack and add it to the grinder.
  3. Add Milk, sugar, Nutella, chocolate icecream and blend them. If you want more Ferrero Rocher, you can add 2 more 😀Ferreeo Rocher shake step 04.jpg
