Balushahi

Indian sweet Balushahi Detailed recipe. Balushahi is an Indian dessert that have an appearance like donuts. They are crispy and flaky and soft from inside. Balushahi is everyone’s favorite as they melt in the mouth.

Ingredients (Makes around 14- 16 balushahis)

  • All purpose flour- 3 cups
  • Baking soda- 1/2 tsp
  • Ghee(Clarified butter)- 1/2 cup
  • Yogurt-  8 tbsp
  • Salt- 1 tsp
  • Water- 2 tbsp(for dough)
  • Sugar- 2 cup
  • Water- 1 cup
  • Cardamom powder- 1 tsp(optional)
  • Saffron strands- few(optional)
  • Ghee- for frying

Method

  • In a bowl, add all purpose flour, baking soda, salt and yogurt. Crumble it well.Balushahi step 01
  •  Add ghee. Balushahi step 02
  • Crumble it well . Do not over mix it.Balushahi step 03
  • Add 2 tbsp water. Gather it into a dough. Do not knead it too much otherwise. Let it set for 10 – 15 mins.Balushahi step 04
  •  For sugar syrup-In a saucepan, add sugar and a cup of water. Let it boil on a medium flame.Balushahi step 05
  • Boil the sugar syrup until its thick. Add cardamom powder and saffron strands if you want. We don’t need 2 string consistency of syrup. It should be little thin so that the balushahis gets soaked in it very well. (Tip- add a little bit of lemon juice so the syrup will not crystallize)Balushahi step 06
  • When the dough has set, make small balls of dough. Take a ball and press it in the centre so that it cooks well. Balushahi step 07
  • Make this of complete dough in the same way.Balushahi step 08
  •  Heat ghee in a frying pan. Add ghee enough that balushahis  gets dipped in it.Balushahi step 09
  • Add the balushahi balls in cold ghee and fry them on a low flame to acheive a flaky balushahi.Balushahi step 010
  • Balushahi will start floating over the ghee. Do not flip them.Balushahi step 11
  • When the balushahi start turning golden brown, turn them.

     

  • Fry them till they are complete golden brown. Balushahi step 14
  • When done, remove them and let it cool. Balushahi step 14
  • When they are cool , dip them in sugar syrup. Gently remove them from syrup.

     

  • Garnish with some chopped pistachios Balushahi2

Apple Pie

Apple Pie is loved by everyone. This is a quick and easy method of making apple pie. Apple pie is a perfect dessert and you can make this for Christmas.

Here I have used my own way of making upper crust. I depends on what type of crust you want. I preferred to cook the apple filling and then baking of the pie. I have already shared the recipe of making pie crust. Here’s the link Pie Crust

Ingredients-

  • Apples- 4 or 5, big
  • Castor sugar- 1 cup
  • Melted butter- 4 tbsp(unsalted, if salted then do not use salt)
  • Cinnamon powder- 1 tsp
  •  Salt- 1/2 tsp
  • Glaze- 1 teaspoon honey and one teaspoon water

Method-

  • Wash apples. Peel and cut them in medium pieces.Apple pie step 02
  • Heat a pan. Add butter and chopped apples. Saute for a min.Apple pie step 03

  • When the sugar turns into liquid, add cinnamon powder. Mix well.Apple pie step 05
  • Then add the corn starch. Mix immediately. Apple pie step 06.jpg
  • Let it cook for 5 mins. Then turn down the flame. Remove the apple filling and let it cool down completely.Apple pie step 07.jpg
  • Bake your pie crust. Apple pie step 08.jpg
  • Roll out pie dough for upper crust. Cut out stripes with the help of knife.

     

  • Place your apple filing on pie crust. Now keep strips on one side lengthwise.Apple pie step 11
  • Now keep other strips from the opposite sides as shown.Apple pie step 12
  • Preheat the oven . Bake the Apple pie at 180° for 15 to 20 Mins.Apple pie step 14
  • When done, remove the pie and let it cool to remove it from pie plate.Apple pie step 15
  • Brush the pie with honey and water for shine on your pie. Serve with whipped cream or dust some icing sugar. Apple pie4.jpg
